Another chicken recipe, easy and interesting. It looks festive. Dried fruits and nuts give it a special flavour. I think other fruits can be a substitute too.
1 chicken cut into parts (no skin)
olive oil
ginger (pinch)
prunes or figs (6-8)
raisins (about 70gr)
1 onion
almonds (about 70gr)
sesame
saffran
pinch of dried mint
cinnamon
salt, pepper
carrot, onion, herbs for chicken stock
Put meaty parts of chicken into big pan in olive oil. Brown them a bit, add onion, ginger. Other chicken parts put in water with vegetables for the stock and cook.
Add raisins and prunes to the frying chicken and then pour some stock into the pan. Simmer for 45 minutes. Add saffron.
On another pan brown some almonds and then some sesame seeds.
Take the prunes out, cover with sesame. When chicken is ready, take it out on a plate, garnish with sesame covered prunes, almonds and serve with couscous, bulgur or eventually, anything you like.
