I do believe that we are what we eat, and that food makes a big difference. So to be in good condition and good mood I try to choose healthy food.
Today I offer to you this nice moist and naturally sweet bread/cake with crunchy crust. There is no sugar in the recipe, but bread is sweet enough to eat it as a snack or on breakfast with something savoury. My children ate it surprisingly well:)
Sweet potatoes are really healthy vegetables, and what is important for me- rich in beta carotine, which cares for the health of your eyes (and skin). And this bread is pretty much packed with this lovely vegetable.
2 cups baked and mashed sweet potato (I guess pumpkin would work nicely too)
3 eggs
vanilla
pinch of salt
4tb.s. vegetable oil
1t.s. cinnamon
1/4t.s. ground ginger
1/2cup raisins
handful pepitas
1 3/4 cups WW flour
10g baking powder
1tb.s. lemon juice
Combine baked (at 200C for 45 minutes) and mashed potato with the other wet ingredients. Carefully add dry ingredients. Grease rectangular baking form and transfer the batter into it. Sprinkle with some pepitas on top.
Bake at 175C for 1,5 hours.
Store in refrigerator.
