This is one typical winter dish from Holland, there are a lot of different variations though. It's not haute cuisine:), but it's quite tasty and easy to prepare.
For 3 people I took:
4 medium carrots
1 onion (better red)
apr.200g sausage for frying (like chipolata)
full fat milk
Boil potato, slice carrots quite thin, cut onion. Fry sausage for 7-8 minutes until done, remove.
In the same frying pan adding some olive oil, if needed, cook onion and carrots for apr.5 min, add curry and cumin.
Mash potato with milk, add salt, black pepper and other vegetables from the pan.
Serve with sausage and spring onion.
