Lemon soft cookies

Very good recipe, especially for those who like lemons. As I make sweets mostly for my daughter (sometimes husband also joins) it does not happen very often. So I have time to find something new every time. Somehow I find it difficult to keep to the same old recipe, though I did try very good ones, which deserve to be a keeper. And this recipe is definitely worth trying!



apr.400gr flour
baking powder (1 big t.s.)
salt
100gr butter (soft)
apr.140-150gr sugar+ 10gr vanilla sugar
2 eggs (not big)
apr.400gr thick (greek) joghurt (but not more)
juice and zest of 1 lemon

and glaze:
apr.150gr sugar
zest and juice of 1 small lemon
to prepare- heat this up in a pan

Oven 190C.
Mix in blender sugar, butter, eggs, lemon juice, zest and joghurt. Now add flour, salt and baking powder.
On baking paper put 1 big tb.s. of dough to form a cookie, leaving some space in between.  Bake for apr.13 min, until they are slightly golden. Take them out and let them cool.
Then cover with glaze and allow it to harden.
