Chicken again. Very quick and tasty dish. Exactly what I need today, cause I feel a bit low on energy for very creative work. I just took paprika instead of chili, cause yesterday's chili with beans was a bit too hot to have it two days in a row.
chicken meat (any favourite parts) apr.500gr
bread crumbs
1 onion
2 cloves garlic
1 large tomato
apr.150gr frozen peas
2 potatoes (medium size)
apr.100 gr carrot
white wine apr.80ml
cumin
oregano
parsley
salt, pepper
paprika ( and peruvian yellow chili)
First on olive oil cook chicken (covered with crumbs) until golden (season with salt and pepper). Take it out. Now add onion, garlic, tomato, herbs and spices. When the onion is transparent put the chicken back, add carrot, peas and potato. Pour wine over and simmer for 20 minutes (adding some water, when needed).
Serve with whatever you like, usual in Peru would be rice, I guess.
