Rolls with Ricotta and Spinach

Italian recipe, another way to use lasagna noodles. I found it quite interesting. It's not difficult to make, though it takes some time, but no special technics are required, just patience:)

You will need 2 sauces- bechamel and marinara (200ml or so of each). You can make based on your own recipe, or the one from noodles package. Just standart and basic recipe.

For the filling of rolls:

apr.400gr ricotta cheese
400gr spinach
150gr parmesan
100gr prosciutto
1 egg
salt, pepper
little olive oil
8-10 lasagna sheets
and mozzarella for topping



Oven 220C.
Ricotta, egg, spinach, parmesan, salt and pepper should be mixed. Boil lasagna noodles in salted water until they are flexible, but not well cooked.
Take a form, grease it and pour bechamel sauce at the bottom. On a table place 4-5 lasagna sheets, put filling on each and roll them. Place in form with seam side down and pour some bechamel on them. Make another row of rolls on top and now pour marinara sauce (save some for serving) and sprinkle mozzarella. Cover with foil and place in the oven for 20 minutes, then remove foil and leave for another 15 min. When you take them out, let them rest for several minutes and serve with marinara to taste.
