As my freezer is quite packed with chicken, this is another chicken recipe:) Very nice tender meat with a bit garlic and herbs flavour. Again, easy to make.
I served with rice.
1 chicken (this one is 1,3 kg)
2 lemons
2 oranges
oregano (dried)
olive oil 2 tb.s.
salt, pepper to taste
1 garlic head
Clean the chicken, season it inside, stuff with 1 cut into 4 parts orange and 1 lemon. Add garlic cloves (skin on). Tighten legs together with a string. Place in in a dish in the oven 200C for an hour (adding chicken stock to prevent burning).
Make sauce- squeeze lemon and orange, add olive oil and srashed garlic cloves, season and put some oregano in it.
Start brushing this sauce after 1 hour of roasting the chicken.Continue for about 40 minutes.
After you take the chicken out, put the remaining juices in a pan and simmer, adding some more broth, if it's not enough. Serve with the sauce.
