I just love such type of food and I ate the biggest part of this one myself. Low calorie, low fat and very tasty.
300g couscous or bulgur
100g feta cheese (or similar)
small bunch of parsley
some fresh mint
Boil bulgur in water or vegetable stock until done.
Slice courgettes thinly and grill with some olive oil on both sides for couple of minutes.
In a salad bowl mix cheese cubes, parsley, mint, couscous, courgettes with lemon juice and some olive oil, if needed, add salt.
