A very nice reminder, that spring is coming...soon:)
This proportion is for 3 lavash bread or 4 tostadas.
2 zucchini, sliced
70g feta cheese
3-4 scallions, chopped
100g mushrooms (better with flavour, but I took champignions)
flatbread
olive oil
paprika flakes
black pepper
On a grill pan grill zucchini slices couple of minutes from both sides (use some olive oil). Now the same with mushrooms, just less time is needed.
Grill from both sides each flatbread, sprinkling some olive oil
Put flatbread on a plate, toss all vegetables, cheese cubes and spices in a bowl and place on top of bread, drizzling with lemon juice.
Now it can be wrapped and eaten:)
