Quick rice for emergencies, usually all of the ingredients are already in the cupboard.
250g basmati rice
handful cashew nuts
2 garlic cloves
vegetable stock or water
Cook on oil garlic and spices for 2 minutes, now add rice, stir and add water/stock. In a couple of minutes place raisins. Cover, cook for 15 minutes apr. Add spinach, maybe some more water and nuts. Sirr and turn the heat off. Can be served with joghurt.
Makes a nice light dinner or can accompany meat, for example.
