Pumpkin cheesecake

Nice and full of flavour cheesecake. It's quite healthy also.



225g cookies
25g butter
1 lemon (juice and zest)
appr. 350g pumpkin puree
150g sugar
500g cottage cheese
200g yoghurt
cinnamon
3 eggs
200g pineapple



Oven 170C. Prepare the crust with cookies and butter. I put pineapple slices on the crust for nice fruity taste and additional texture.
For the cheesecake: mix together all ingredients. Pour onto the crust and bake for 45-50 minutes until cooked, but still a bit squidgy. Refrigirate for couple of hours, decorate with anything you like (whipped cream, honey, fruit, nuts...). I didn't put anything additional.
