Old recipe from south France. Just another effortless use of aubergines (I love aubergines), makes healthy side dish.
3 large aubergines
3 garlic cloves
salt, pepper
2 eggs
4 anchovies
3 slices of bread soaked in milk
Cut eggplants in rounds, together with garlic fry them on olive oil. Mix with bread, beaten egg yolks and parsley. Then whisk egg whites until stiff and add to the mixture.
Grease and sprinkle with flour medium to small size form, pour this mixture in it. Oven 200C for 20 minutes.
