We love this chicken. Used to buy it very often from portugese family business cafe. Since we moved from that place, we never had opportunity to find a good substitute. Just recently, out of great necessity of spicy meat, I was searching for a recipe, that would remind me of THAT chicken. I guess I found one.
1 small chicken (1kg or so) spatchcocked
salt, pepper
Piri-piri sauce:
chili powder/flakes
2-3 garlic cloves
1tb.s. salt
0,5tb.s oregano
0,5tb.s. paprika
100ml olive oil
50ml red wine venigar
All ingredients for the sauce simmer for 2-3 minutes in a pan. Cool down; if needed, blend it.
Half of sauce spread over chicken, wrap in plastic and leave to marinate for at least 1 hour.
Season with salt and pepper the chicken and grill it on a pan for several minutes from both sides.
Preheat the oven 200C, place the chicken on a roasting tray and roast for about half an hour.
