When I found this recipe, I could not believe it looks so good, but does not require a lot of afford or special products to prepare. So I definitely made it, and it was a success and also I share it with you. I am sure you will enjoy it too!
1-2 eggplants
2 eggs
3 galic cloves
basil
ap. 300g macaroni
100g semi-hard cheese
breadcrumbs
for meatballs
apr.400g minced beef
1 egg
some cheese
old bread+milk
onion, garlic
salt, pepper, parsley
tomatoes+tomato paste
You can make meatballs in advance (just mix all ingedients in blender, make small balls, fy in olive oil, then add tomato paste with water, tomatoes, garlic, basil and cook until they are ready).
Now boil two eggs, cut in pieces. Cook pasta until al dente. Fry eggplant (circles) in olive oil with garlic. Now take ovenproof dish/pan and grease it, then sprinkle breadcrumbs on it, so that the pasta would not stick. Make layers of first a little pasta, then meat with sauce, egg, eggplant, basil and cheese. Repeat. Last layer should be cheese.
Place this pan into the hot oven (200C) until it is a bit golden and crispy. Serve either turning it upside down on a plate or just like it is.
