We actually don't eat sweets so much, only my daughter grabs one or two once in a while. So this was the time to make some, as she kept asking me for already several days for a cookie (and checking cookie box). The recipe is not my invention, I found something very similar, but made my corrections to it.
Well, these are not light , but they are pretty and very tender with incredibly cosy smell. Out of this recipe you get apr. 40 cookies. I made 2 batches within several days (just store the dough in refrigerator, wraped in plastic).
250g butter
apr. 3 cups flour
apr. 75g sugar
vanilla
salt
1 egg+1 tb.s. water
coconut flakes
jam
Make a dough out of first 5 ingredients. Easier to use blender/mixer.
Bring it all together in a ball and wrap in plastic. Put in the fridge for 30 minutes.
Make small balls (smth like 3 cm), bathe them in egg-water mixture and cover with flakes. With your finger create a small hollow and dot it with jam.
Oven 175C for apr. 20-25 minutes. They will get more brown, of course.

And in the second batch I didn't use jam, just rolled the balls in cocoa
