No heavy sauce pasta. Light and full of vegetables.
150g pasta (I took rigatoni)
1 large tomato
1 small green chili pepper
150g mushrooms (chestnut)
1 bell pepper
1 small onion
1 garlic clove,
1t.s. pesto
pinch of paprika
some salt, pepper
250g cooked chicken, sliced
On olive oil stir fry onion, garlic and mushrooms. Add the rest of vegetables and cook for several minutes. Add chicken meat. Season, add some pasta water if too dry.
Cook pasta in the meanwhile. Drain and mix 1 t.s. of pesto with it. Combine with vegetables and chicken and serve with cheese and basil or other prefered greens.
