Mexican bean salad

Healthy salad, bright colors, makes a great brunch!



1 avocado
100g canned beans
bunch of parsley
2 eggs (cooked)
1 large tomato or several cherry tomatoes
half of small onion
olive oil
lime juice
salt and pepper to taste



Cut tomato in cubes, or just into halves if they are small. Mix in a salad bowl beans, parsley, tomato, onion, cut in thin wedges, add thinly sliced avocado and pour dressing. Toss and place pieces of eggs on top.
That's it:)
