Healthy and tasty light food. Makes a great dinner!
1 onion
oil and butter
150g chestnut mushrooms
1 garlic clove
150g arborio rice or round rice
150ml dry white wine
4 dried tomatoes
vegetable stock
parsley
parmesan to taste
100g spinach
On frying pan cook onion in butter and olive oil and add garlic and mushrooms. Cook for several minutes, add rice, stir and pour wine, wait, until it is absorbed.
Now put tomatoes and add litle bit of stock. Wait, until it is absorbed, add more stock- do this a couple of times. Rice will become creamy.
Add parsley, some parmesan and spinach, stir and cook for apr.5 minutes. Serve!
