Trenette or other flat pasta for 2-3 people
bunch of parsley
zest of 1 lemon
10-15 olives, pitted
half tb.s. thyme
paprika flakes
2tb.s. olive oil
salt
Cook pasta, drain and save some water.
In blender mix parsley, olives, lemon zest, thyme and olive oil. Now combine parsley paste with trenette, adding water if too dry. I sprinkled with favourite cheese on top.
Makes great light dinner or can be used to accompany meat or chicken.
