Makes light and refreshing dessert.
For coconut layer:
400ml coconut milk
3 egg yolks
2 tb.s. corn starch
app.100g sugar
For lime creme:
2 limes (zest and juice)
250ml water
2 tb.s. corn starch
2 egg yolks
Bring milk to a boil, mix together the rest of ingredients, pour some milk into the egg mixture, whisk well pour it back to a pan with milk and thicken, whisking constantly. Let it cool a little and transfer into dessert glasses (6 small or 4 bigger ones).
Bring water to boil, mix the rest of ingredients (except juice) and combine with water, whisking, thicken, set aside, add lime juice. Pour lime layer on top of coconut layer.Refrigerate. Serve with some coconut flakes or whatever you prefer.
