Easter cake recipe from Napoli (Naples). Nice family cake.
Crust:
685g flour
cinnamon
salt
150g butter
200g sugar
2 large eggs
Filling:
app.150g cooked hulled wheat
salt
orange zest 1t.s.
500g fresh whole cottage cheese
3 large eggs
125g sugar
3tb.s. orange water (or sub. with orange cognak)
app.220g candied citrus fruit pieces
For the dough:
mix dry ingredients, then in another bowl combine wet ingredients until soft and add to the dry. Create a ball out of the dough, devide into 2 parts (one bigger then the other), refrigirate.
For the filling:
Blend all the ingredients together, then add wheat, mix.
Prepare 24cm springform, butter it and roll the biggest part of the dough, put carefully onto the form, creating walls. Pour the filling on top. Make stripes out of remaining dough, lay them across the cake.
Bake for 60-70 minutes at 175C. Let it cool before cutting.
