Very easy spring pasta.
250g penne
handful spinach
app.200g leeks (sliced)
2 full tb.s. light cream cheese
parmesan
salt, pepper
sun dried tomatoes app. 4-5 halves
Cook penne al dente. On oil fry leeks for 3 minutes, add cream cheese and some hot water to dissolve it, season, after couple of minutes add spinach and tomatoes, put aside.
Mix penne with vegetables and sprinkle with parmesan.
