Makes a nice light lunch or dinner.
olive oil
3 small potatoes
250g mushroom
1 aubergine
1 small onion
curry powder
2 garlic cloves
1t.s. grated ginger
beef stock/vegetable stock app.100ml
coconut milk app.100ml
Fry on oil onion and potato for a couple of minutes, add mushroom and aubergine, then garlic and ginger. Fry for 5 minutes, add stock and milk and steam for 10 or so minutes. Sprinkle with parsley and serve hot.
