Aubergine and sheep cheese tortiglioni

Just very good combination, and very easy as well.



2 small aubergines, cut into small chunks
2 big tomatoes
1 small onion
dry basil
tortiglioni or penne (for 2)
olive oil
sheep cheese



Cook pasta. On olive oil fry aubergine pieces and onion, add tomatoes, basil and season to taste. Cook for about 10 minutes, serve with pasta and cheese cubes.
