Absolutely no fat (except for some coconut) and almost no sugar, but a lot of flavour and health benefits:) And as always, very fast!
2 cups (220ml) oat flakes
1 t.s. baking powder
3 tb.s. sugar (to taste)
pinch of salt
1/4 cup coconut shred
thumb size grated ginger
app.120g very thick greek yoghurt
2 egg whites, lightly beaten
powder sugar+vanilla for dusting
Mix wet ingredients and dry ones in a separate bowl, then combine. Preheat oven to 175-180C, line baking tray with paper and drop 25 (app. 1,5 tea spoon size) cookies.
Bake for 15 minutes, dust with powdered sugar.
