Very good sweet ice cream. Creamy, airy, with nice texture and full of flavour.
550ml cream (26%)
3 egg yolks
vanilla
80-100g sugar
3 tb.s. rum, liquer..(here Vanna Tallinn)
80g processed in blender chocolate with raisins and nuts
Let 300ml cream with vanilla and half of sugar boil. Set aside. Mix yolks with half of sugar until pale and creamy, add a bit of warm milk into yolks, stir and mix all yolks with warm cream. Heat several minutes, stirring, until creamy. Set aside, add liquer.
Whip 250ml of cream until soft picks, add to the warm cream with chocolate crumbs. Let it freeze in an aairtight container overnight.
