Inspired by...Starbucks salad?....yeah, I know, sounds weird, nobody goes for a salad to Starbucks... but we happened to try it and we liked it:)
For two:
rucola 300g (or other mixed greens)
goat's cheese (cubes) app.100g
dried apricots (chopped) good handful
walnuts app.80g
Dressing
balsamic vinegar 2 tb.s.
pomegranate molasses 2 full tb.s. (or dark honey)
olive oil
dry basil
Basically, mix all ingredients together and enjoy!
* For lighter version one could sub with feta cheese, but I would recommend "original" version:)
