Meatloaf

This thing is eaten so often in Holland, that I decided to make it one day too. And I loved it, actually. It's lean meat and it's not dry.

500g lean beef
1 onion
1 carrot
1 t.s. mustard
150g yesterday's bread
50g black olives
paprika flakes
salt, italian herbs
3 eggs
2 garlic cloves
1 tomato (or dried ones)
mushrooms (optional)

Half of onion fry in oil with carrot. Another half and meat, bread, herbs and eggs mix in blender. Then add fried onion and carrot, olives and tomato. Mix, place into long form (brush with oil).
Brush top of the meatloaf with tomato paste, balsamico, olive oil and sugar.
Oven 175C for 1 hour. First 30 min. with alluminium foil on top, after take it away.
