Unfortunately I can not find the source where I found this lovely recipe, but it belongs to a dutch baker from New York.
Very tasty, with a crust and tender inside...by the way you can add there different ingridients to your taste. This is the bread I was looking for along time and I now it is very difficult to *seduce* me with any other recipe:)
This is for a *proof* loaf, you can make it double.
400 g flour (I usually take 200 g white and 200 g grey with seeds)
1 t.s. salt
1/2 t.s. yeast
200 ml lukewarm water
Make a dough, and place it to rise for 12-18 !!! hours (cover with wet towel). Better to do it in the evening, so that in the morning you can bake it for breakfast.
After you work it one more time and put again for 2-3 hours to rise.
Put your oven (mine is electrical) at 200C, put big heavy ovenproof saucepan with a lid on in the oven and wait until it gets hot. Then put the dough in and bake for 30 minutes with a lid on and 15 more without.
The result is amazing!
