Mediterranean grilled chicken with mint pesto

Very fresh and delicious chicken. Can be served with anything you like or on flat bread and is made in 15 minutes or so.

500-600gr chicken breast (cut into medium size pieces)
paprika 1 tb.s.
chili pepper 1 t.s.
cumin 1 tb.s.
1 t.s. mustard
black pepper, salt
olive oil

For pesto:
1 bunch mint
smaller bunch parsley
3-5 garlic cloves
1 tb.s. red pepper flakes
2 t.s. honey
1 t.s. (big one) Dijon mustard
salt and black pepper
olive oil, lemon juice- to make sauce like consistency
some water, if needed



Marinate chicken meat in all the spices and a little bit of olive oil for 15 minutes.
Prepare pesto- using blender just mix all the components for the sauce, adding water in the end if too thick.
On grill pan cook meat for 10 minutes of so until it's done.
Serve with the sauce.
