Apricot multi flour bread

Recipe for a huge round loaf with nice crispy crust.



150g dried apricots
3 cups lukewarm water
10g yeast
3 cups flour
2 cups wholewheat flour
1,5 cup corn flour
50g mixture of seeds
thyme
1,5 tb.s. salt
semolina for dusting



Mix water with yeast, add flours and slowly add salt. Now pieces of apricot and thyme. Let the dough stand for 1 hour. Shape the dough into round loaf, place it on baking sheet, sprinkle with semolina. Leave for another 40 minutes.
Preheat oven 220C. Place the dough in the middle and put a bowl with water on the bottom. Bake for apr.40 minutes.
Let it cool on a wire rack.
