Such a nice light salad, reminds of summer time in the middle of winter!
2 medium tomatoes (cut into 4 pieces)
1 onion (better red, cut into wedges)
2 small courgettes (sliced thickly)
1 bell pepper (cut into pieces)
250-300g canned beans
100g feta cheese (or similar)
parsley and mint
olive oil
black pepper
lemon juice
salt
Roast with some olive oil tomatoes, courgettes and onion wedges for about 30 minutes in the 200C oven.
Mix in a bowl beans, parsley and mint, cheese. Add roasted vegetables (chilled a little), sprinkle with lemon juice and olive oil to taste.
