A very good recipe of light and delicious dessert. It's a bit crispy on top and more like lemon curd at the bottom - and both textures taste lovely!
3 eggs, separated
250ml milk
50g flour
170g sugar
1 lemon (zest and juice)
25g butter
vanilla icing sugar for topping
Mix in blender butter, sugar and lemon zest and juice. Add 3 egg yolks, milk, flour, blend well. Now whisk egg whites until just foamy and stir into the mixture.
Oven 160C, butter ovenproof form, pour the mixture in it. Place the form on a baking tray filled with water. Bake for 45-50 min. Serve warm!
