Nice looking tasty starter.
150g mushrooms
butter
25g flour
320ml milk
80g swiss cheese
salt, pepper
3 eggs
some greek yoghurt
Fry for several minutes mushrooms in butter, reserve 2 tb.s. - the rest mix with flour, milk and thicken for a minute. Stir in grated cheese, set to cool. Beat in yolks. In another bowl whip egg whites (not too much) and fold into mixture.
Preheat oven 180C, place souffles in small forms and on baking tray filled with cold water. Bake for 15 minutes. Let them cool.
Lower temperatue until 170C. Take each piece out and put on small square baking paper. Top with some yoghurt, reserved mushrooms and cheese. bake for 15 more minutes and serve!
