Tart with spinach and olives

A nice savoury tart, good as breakfast or lunch.



400g spinach
100g cheese (feta or goat cheese)
2-3 eggs
1 onion
3 garlic cloves
100ml cream
salt, paprika, pepper

For the crust:
250g flour
1 egg
70g butter
2-3 tb.s. water
salt



Combine ingredients for the dough and mix them into a ball, set in the frige for 30 min.
Prepare topping:
Fry onion and garlic on olive oil, add spinach and cook for 2 minutes.
Combine eggs with cream and pieces of cheese. Season.
Roll the dough and place into form (better springform), bake at200C for 10 min. Then place spinach and egg mix on top of the crust. Bake another 10-15 minutes.
